Mojito Pesto

SAUCE ON
Fettuccine • Rotisserie Chicken Wrap • Potato Gnocchi
Ingredients

1 cup Fresh Basil
1/4 cup Fresh Mint
1/4 cup White Rum
1/4 cup Olive Oil plus more for a smoother pesto
1/2 Fresh Lemon Juice / Zest
1 Fresh Lime Juice/Zest
1/2 cup Pine Nuts
1/4 cup Walnuts
1/2 cup Grated Parmesan Cheese
2 Garlic Cloves
1 tbsp Honey
1 tsp Sea Salt
1/2 tsp Fresh Ground Black Pepper
Preparation
1.
Put mint leaves into a ramekin or small bowl. Cover with white rum.

Into a food processor or blender put soaked mint leaves, garlic, basil, honey, lemon juice/zest, lime juice/zest, parmesan, walnuts, pine nuts, salt and pepper. Blend for 30 seconds.


3.
Put food processor to low and start blending. Drizzle in olive oil until desired consistency.
