Smoked Apple Ketchup

Beer Braised Brat • Parmesan Polenta Fries • Corn Dog
Ingredients

2 Honey Crisp Apples Smoked
20 Cherry Tomatoes
1 small can (8oz) of Tomato Paste
3 Garlic Cloves
2 Whole Carrots pealed and diced
1 Sweet Onion diced
1 large can (29oz) of Tomato Sauce
1/4 cup Red Wine Vinegar
1/4 cup Minced Ginger
1 cup Apple Woodchips (for smoker)
1 tbsp Smoked Paprika
1 tbsp Olive Oil for cooking
1 tsp Fresh Ground Black Pepper
1 tbsp Sea Salt
Preparation
1.
Set smoker to 225 degrees. Cut apples in half and smoke for 20 minutes using one cup of apple chips. Use a stand alone smoker or a smoker box on a grill.

While apples are smoking cut up onions, carrots, and garlic. Put into a medium sized sauce pan with olive oil and sauté for five minutes

Add in smoked apples and cherry tomatoes. Sauté for five minutes.

Add the rest of the ingredients into the sauce pan including minced ginger, smoked paprika, tomato sauce, tomato paste, red wine vinegar, salt and pepper. Simmer for 20 minutes with lid on.

Let ingredients cool For 10 minutes. Add cooled ingredients to a blender and blend on high for 1 minute. Keep in the refrigerator for 2 weeks or freeze for up to 6 months.
