Smoked Cactus Salsa

SAUCE ON Carne Asada Nachos • Breakfast Quesadilla • Grilled Tilapia Tacos
Ingredients

1 cup Jarred Cactus
2 Chipotle Peppers in Adobo
2 Garlic Cloves
1/4 Sweet Onion
1 can Peeled Tomatoes 28oz (and only half the liquid)
1 Jalapeño
1 tbsp Smoked Paprika
1 tsp Cumin
2 Limes Juiced
1 Cilantro Bunch
1 tbsp Honey
2 tsp Salt
1 tsp Pepper
Preparation
1.
Preheat smoker to 225°. Add cactus to the smoker and smoke for 10 minutes. If no smoker, double the amount of smoked paprika

While cactus is smoking, in a food processor, add onion, canned tomatoes, jalapeño, smoked paprika, garlic, cumin, cilantro, chipotle in adobo, honey and salt. Add smoked cactus when done.

Blend all ingredients for 30 seconds

Enjoy with your favorite style of tortilla chip!
