Smoked Ginger Thai Peanut Sauce

SAUCE ON Soba Noodles • Pork Spring Roll • Sweet Potato Fries
Ingredients

1 cup Smooth Peanut Butter
1 Medium Sized Ginger Root
1/2 cup Chili Garlic Sauce
1 cup Coconut Milk
1 Lime (Juice and Zest)
1/3 cup Soy Sauce
2 tbsp Brown Sugar
1 tbsp Smoked Paprika
1 tbsp Garlic Powder
1/4 cup Rice Wine Vinegar
1/4 cup Water
*If no smoker, double smoked paprika
Preparation
1.
Set smoker to 225 degrees Fahrenheit. Peel entire ginger root and smoke for 1 hour. Once smoked, blend entire ginger root and water for 2 minutes until it turns to a juice/pulp.

Over medium heat, to a sauce pan add
peanut butter, lime juice/zest, soy sauce, rice wine vinegar, brown sugar, coconut milk, smoked paprika, garlic powder and chili garlic sauce. Cook for 5min until all ingredients are mixed together

Once ingredients are all incorporated, add in blended smoked ginger through a mesh strainer. Make sure to squeeze out all of the juices. Cook for 5 more min.
